If you’ve ever stood in the grocery store looking at different bottles of honey, you may have wondered: What exactly makes raw honey different from regular honey?

The answer mostly comes down to what happens to the honey between the hive and the bottle.

What Is Raw Honey?

Raw honey is honey that stays close to the way the bees made it. After harvesting, it may be strained to remove pieces of wax or other debris, but it isn’t heavily processed.

At Sun Prairie Honey, we harvest honey from our own hives in the Missouri Ozarks. Our goal is simple: offer honey that tastes like honey should—rich, naturally sweet, and full of the character of the season and the flowers our bees visited.

Because raw honey is a natural product, its color, flavor, and texture can vary from one harvest to another. We think that’s part of what makes it special.

What Is Regular or Commercial Honey?

Many commercially produced honeys are processed to create a product that stays clear and liquid longer and looks consistent from bottle to bottle.

Depending on the producer, honey may be heated and finely filtered during processing. Raw honey generally undergoes less processing, which helps preserve more of its natural character.

Does Raw Honey Crystallize?

Yes—and crystallization is completely natural.

Raw honey may eventually become thicker, cloudy, or grainy as its natural sugars form crystals. Some honey crystallizes quickly, while other honey can remain liquid for a long time.

Crystallized honey does not mean the honey has gone bad.

If you prefer liquid honey, you can gently warm the container in warm water until the crystals begin to dissolve. Avoid overheating it.

Does Raw Honey Taste Different?

It certainly can.

Honey’s flavor depends on the nectar sources available to the bees. Weather, season, location, and surrounding plants can all influence the finished honey.

That means real honey doesn’t necessarily taste exactly the same every year—and that’s one of the things we love about it.
